Ingredients

• 150 gm leftover Christmas ham, finely chopped
• 2 zucchini, thinly sliced into discs
• 3 baby yellow squash, thinly sliced into discs
• 30 gm parmesan, finely grated
• 40 gm macadamia nuts
• ½ cup (loosely packed) mint and parsley, stalks and leaves included
• Dressing
• 3 tbsp extra-virgin olive oil
• 1 tbsp Dijon mustard
• 1 tbsp currants
