  • 1 3/4 teaspoons (5g) instant yeast
  • 1/4 cup minus 1 teaspoon (55g) whole milk, cold
  • 4 large eggs (200g) plus 1 large egg yolk (15g), divided, straight from the fridge
  • 3 tablespoons (40g) caster or superfine sugar
  • 3/4 cup (170g) unsalted butter, cut into 1 to 2-inch cubes, and softened to about 65°F/18°C (see headnote for guidance on controlling butter’s temperature)
