Ingredients

• 400g NZ Hothouse strawberry tomatoes
• 1 tbsp olive oil
• 2 small chicken breasts, cut in half lengthwise
• 1 onion, finely chopped
• 2 cloves garlic, finely chopped
• 2 tbsp tomato paste
• ½ tsp cumin
• ½ tsp coriander
• ½ tsp paprika
• 1 cup of water
• ¼ cup chipotle sauce
• 6 small flour tortillas
• 1 avocado
• ¼ cabbage, shredded
• 1 red onion, thinly sliced
• A handful of coriander
• 1 lime
• Salt and pepper to taste
