• 1 onion, finely chopped
• 4 rasher shortcut rindless bacon, cut into 1cm slices
• 1 pinch pepper (for seasoning)
• 250g frozen chopped spinach, thawed
• 1 tsp olive oil
• 4 eggs
• 1 pinch pink salt ground (to taste)
