  • 4 tsp McKenzie's Gelatine Powder
  • 3 tbs cold water
  • 2 x 250g blocks of Philadelphia cream cheese, softened at room temperature
  • 3/4 cup caster sugar
  • 600ml thickened cream, lightly beaten
  • 1 tsp peppermint extract
  • 1 packet Chocolate ripple biscuits (250g)
  • 1 packet (200g) Mint slice biscuits (reserve 4 biscuits for the filling)
  • 120g butter, melted
