• 1 Red onion, diced
• 1 1/4 lb Sweet potatoes, peeled & cubed
• 2 tsp Coriander
• 1 1/2 tsp Cumin
• 1/2 tsp Paprika
• 1/4 tsp Chili powder
• 1 Tbsp Cooking oil
• 1 can Diced tomatoes (14 oz / 397 g can), drained
• 2 1/4 cups Chicken stock
• 1 to 2 Avocados, cubed
• small handful Cilantro, chopped
• 1/2 Lime, juice of
• for serving Hot sauce (opt)
• for serving on top of chili Sour cream
• for serving Tortilla chips
