Ingredients
- ½ cup SOOC Basil Olive Oil
- ⅓ cup SOOC Sicilian Lemon Balsamic Vinegar
- Zest of 1 lemon
- 1 Tbsp of minced Shallots
- 3 Tbsp of Basil, finely chopped
- 1 small clove of Garlic, minced
- ¼ tsp Sicilian Sea Salt
- Black pepper, to taste
- 6 cups fresh Spinach
- 3 oz of crumbled Goat Cheese
- ⅓ cup Sun Dried Tomatoes (not packed in oil), sliced thin
- 3 Tbsp toasted Pine Nuts
