Ingredients

• 1 cup frozen petite corn kernels, thawed
• 1 tablespoon olive oil
• 1/2 cup peeled and diced red onion
• 3/4 cup mayonnaise
• 2 tablespoons white balsamic vinegar
• 1 tablespoon chopped fresh cilantro

• 1 small garlic clove, peeled and minced
• 1 teaspoon freshly ground cumin seed
• Olive oil
• 4 demi-baguettes, sliced in half horizontally, and partially hollowed out
• 2 red, yellow, or orange bell peppers
• 1 large red onion, peeled and cut in half
