- 2 tbsp quality cocoa powder
- 2 tbsp boiling water
- 3 eggs
- 1/2 cup caster sugar
- 1/2 cup plain flour
- 1 tsp baking powder
- 1/4 cup raspberry jam, to fill
- 1/3 cup cream, lightly whipped
- 1 1/2 cups icing sugar
- 20g melted butter
- 3 tbsp boiling water
