Ingredients

• 1 6oz bag Earthbound Farm Organic Shredded Carrots
• 2 large eggs
• 1/2 cup white sugar
• 1/4 cup brown sugar
• 1/2 cup plain yogurt
• 1/2 cup vegetable oil
• 1 tsp vanilla extract
• 1 3/4 cups all-purpose flour
• 1 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp ground cinnamon
• 1/4 tsp salt
• Optional:
• 1/2 cup chopped pecans or walnuts (for toppings)
• Cream Cheese Frosting:
• 1 cup powdered sugar
• 8 oz softened cream cheese
• 1/4 cup unsalted butter, softened
