Ingredients

  • 225g self raising flour
  • a quarter of a tsp mixed spice
  • 50g margarine
  • 110g sugar
  • 50g chopped peel
  • 110g dried fruit
  • half a tsp bicarbonate of soda
  • 150ml cow's milk or oat milk
  • 1 tbsp vinegar
  • 240 ml / 1 cup brown sugar (or to taste)
  • 240 ml / 1 cup water
  • 240 ml / 1 cup raisins or sultanas (experiment with other dried fruit, such as chopped ready-to-eat apricots)
  • 2 tablespoons oil (rice bran oil is good)*
  • 1 teaspoon ground cinnamon or mixed spice
  • half teaspoon ground cloves or mace
  • 360 ml / 1 & a half cups plain flour
  • a pinch of salt
  • half teaspoon baking powder
  • half teaspoon bicarbonate of soda
  • 120 ml / half cup of chopped walnuts or pecans
