Ingredients
- 2 Tbsp extra virgin olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 2 beefsteak tomatoes, chopped (or substitute a 28 oz can of diced tomatoes)
- 1 Tbsp tomato paste
- 1 Tbsp Piquant Post Casablanca Blend
- 1 Tbsp ginger, grated
- 2 (14 oz) cans white beans, drained and rinsed
- 2 tsp salt
- Black pepper to taste
- 3/4 cup water
- Garnish: chopped cilantro
- To serve: 1 baguette, toasted (optional - omit for gluten free)
