Ingredients

• 4 cloves garlic, crushed
• 2 medium lemons, rind finely grated, then lemons cut into quarters and reserve
• 1/3 cup chopped oregano
• 1/4 cup olive oil
• 1 Steggles Family Roast Chicken (about 2kg), pat dry with paper towel
• 2 large onions, each cut into 2cm-thick slices
• Salt flakes and freshly ground black pepper
• 2 medium zucchini, cut into 3cm slices
• 1 medium eggplant (about 400g), cut into thick slices
• 1 large red capsicum, cut into 3cm pieces
• Extra olive oil, for drizzling
• Extra oregano, for serving
