Roast chicken with lemon & oregano Recipe | Steggles

Ingredients
- Steggles Family Roast Chicken, pat dry with paper towel
- 4 cloves garlic, crushed
- 2 medium lemons, rind finely grated, then lemons cut into quarters and reserve
- â cup chopped oregano
- ¼ cup olive oil
- 2 large onions, each cut into 2cm-thick slices
- Salt flakes and freshly ground black pepper
- 2 medium zucchini, cut into 3cm slices
- 1 medium eggplant (about 400g), cut into thick slices
- 1 large red capsicum, cut into 3cm pieces
- Extra olive oil, for drizzling
- Extra oregano, for serving
