Ingredients

• 1 package (2-layer size) carrot cake mix
• 3 eggs
• 1/4 cup vegetable oil
• 1/4 cup sour cream
• 1 teaspoon vanilla
• 1 can (8 ounces) crushed pineapple, undrained
• 1 cup grated fresh carrots (about 2 medium)
• 1 cup chopped Fisher® Pecan Halves
• 1/2 cup sweetened shredded coconut
• 8 ounces cream cheese, softened
• 1 tablespoon lemon zest
• 1 tablespoon lemon juice
• 4-1/2 cups powdered sugar
• 3 pounds vanilla-flavored almond bark or candy-coating wafers
• 50 Fisher® Pecan Halves
