Chicken with Roasted Onion, Spice Sensation and a Pea & Mint Dressing - Ainsley Harriott

Ingredients

• For the Chicken
• 1 x packet of Ainsley Spice Sensation Couscous
• 1 large chicken breast
• ½ tsp paprika
• ½ tsp dried oregano
• ½ tsp onion powder
• juice of half a lemon
• 3 tbsp olive oil
• sea salt and freshly ground black pepper
• 1 large red onion, peeled and sliced into 1 cm discs
• 2 tbsp chopped parsley
• For the Dressing
• 4 tbsp yoghurt
• 4 tbsp frozen peas, thawed
• 1 clove of garlic
• handful of fresh mint leaves
• juice of ½ Lemon
