• 3 egg yolks
• 1 1/2 cups water
• 1/2 cup freshly squeezed lemon juice
• 1 teaspoon lemon zest
• 3 egg whites, at room temperature
• 1/4 teaspoon cream of tartar
• 1/3 cup sugar
