• 1 small green bell pepper diced
• 1/2 cup (125 mL) salsa
• 8 6-inch (15 cm) corn tortillas or whole wheat flour tortillas
• 1/2 cup (125 mL) shredded Canadian Monterey Jack or Cheddar cheese
