• 1 Link Capital Naturally Smoked Ham Sausage, sliced into quarter-inch pieces
• 5 Tbsp Olive Oil
• 1 Cup Carrots, chopped
• 1 Cup Celery, chopped, leaves reserved
• 1 Cup Onions, chopped
• 2 Cloves Garlic, minced
• 1 tsp Thyme, dried
• 1 tsp Rosemary, dried
• 2 Bay Leaves
• 2 Cups Cups Lentils, rinsed and sorted
• 8 Cups Vegetable Stock, adjust as needed
• 1 Can San Marzano Tomatoes, diced or blended, to taste
• Salt and Pepper, to taste
