• 1/2 cup sun-dried tomatoes with oil, drained
• 1 tablespoon garlic powder
• 12 ounces uncooked gnocchi
• 1 cup chicken broth
• 1/2 cup half & half
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 2 chicken breasts cubed and seasoned with Salt & Pepper See notes*
• 2 cups fresh baby spinach
• 1/2 cup grated Parmesan cheese
• (optional) 1/4 teaspoon crushed red pepper
