- salt and lots of freshly ground black pepper
- 2 tablespoons olive oil
- 3 onions (thinly sliced)
- 2 cloves garlic (peeled and smashed)
- 1 teaspoon brown sugar
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- 1 bay leaf
- 3 cups good-quality beef stock
- 8 white Italian bread rolls
- ½ cup horseradish
- ¼ cup sour cream
