• 1 tbsp unsalted butter
• 1 large onion, finely chopped
• 4 green apples, peeled, cored and cut into ½-inch wedges
• 2 tbsp grated ginger
• 1/4 cup cider vinegar
• 2 tbsp dark brown sugar
• 1 tbsp grainy mustard
• 1 tsp chopped thyme
