Ingredients

  • Palm Nut Base
  • Fish and Seafood
  • 1 lb smoked mackerel or similar smoked fish (like smoked catfish or tuna), cleaned and cut into large pieces.
  • 1 lb fresh firm white fish (such as cod, snapper, or tilapia), cut into 2-inch chunks. (You can also use only smoked fish for a more intense smoky flavor).
  • ¼ cup dried shrimp or crayfish, finely ground (or 2 tablespoons crayfish powder).
  • Optional: ½ cup small raw shrimp, peeled and deveined, for extra depth.
  • Aromatics & Spices
  • 1 large onion, diced
  • 4-5 cloves garlic, minced
  • 1-2 Scotch bonnet or habanero peppers, whole or minced (remove seeds for less heat, or use a milder pepper like serrano or jalapeño for a gentler spice).
  • 1 tablespoon ground allspice
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • Salt to taste
  • 1-2 bouillon cubes (chicken or vegetable, low-sodium option recommended) or 1 tablespoon bouillon powder
  • Greens & Finishing Touches
  • 5 oz fresh spinach, collard greens, or kale, roughly chopped (spinach cooks down quickly, collards/kale offer more chew).
  • Water or fish/vegetable stock, as needed.
