Cheesy Mushroom Lasagna Soup - San Remo

Ingredients

• San Remo Instant Curly Lasagna Sheets 250g
• 2 tbsps olive oil
• 1 leek, finely chopped (white only)
• ½ tsp red chilli flakes
• 3 garlic cloves, minced
• 2 bay leaves
• 200g swiss brown mushrooms, finely chopped
• ¼ cup red wine
• 400g sugo/basil tomato pasta sauce
• 1 tsp dried oregano
• salt and pepper, to taste
• 1 litre vegetable stock
• 8-10 basil leaves
• ¼ cup grated parmesan cheese
• ½ cup grated mozzarella cheese
