Artichoke Pie in a Flaky Crust

Ingredients

• 1 1/2 cups flour
• 1/2 tsp. salt
• 8 T. butter
• 3/4 cup ricotta cheese
• 4-6 artichoke bottoms (frozen from Egypt are the best), sliced
• 4 T. olive oil
• 2 T. chopped onion
• 4 T. chopped carrot
• 1 T. parsley
• freshly ground pepper
• 3/4 cup ricotta
• 1/2 cup freshly grated parmesan cheese
• 2 eggs
