- 50g gouda
- 1/2 shallot, sliced
- 2 tbsp pecorino Romano, grated
- Mature gouda, for serving
- Olive oil
- 350g
- Salad Dressing:
- 2 tsp cranberry jelly/sauce
- 1 tbsp olive oil
- 2 tsp vinegar
- 1 tsp finely diced shallot
- A pinch of your favourite seasoning
- 1/2 lemon, zest and juice
