• 2.0 boneless, skinless chicken breast
• 2.0 pastor marinade (recipe above)
• 2.0 pineapple, peeled and cut into 1/2″ rings
• 1.0 onions, sliced into 1/4″ thick rings
• 0.25 light olive oil
• 0.25 chopped fresh cilantro
• 0.5 finely grated cotija cheese
