• 1 medium onion, sliced
• 2 cloves garlic, whole
• 2 large potatoes, thickly sliced
• 1 medium carrots, thickly sliced
• 1 bay leaf
• 1/2 teaspoon fresh tarragon leaves
• 1 whole clove
• 1 whole peppercorn
• 2 cups apple cider
• black pepper, to taste
• chopped parsley for garnish
