Couscous Pudding with Caramelized Pecans
We really love rice pudding but were out of rice so I decided to substitute couscous and it came out great
Ingredients
- - ⅔ cup water
- - ½ cup couscous
- - ¼ teaspoon salt
- - 2 cups fat-free milk
- - ¼ cup white sugar
- - 2 eggs
- - ½ teaspoon vanilla extract
- - 3 tablespoons butter
- - ½ cup chopped pecans
