Ingredients

• 1 tbsp oil
• 1 onion, finely chopped
• 1 cup sweetcorn , boiled or canned
• 4 spring onions , sliced
• ½ red chilli, finely chopped
• ½ tsp ground coriander
• ½ tsp salt
• ¼ tsp pepper
• ½ tsp oregano
• 1 lime , zested
• 2 large tortillas
• 30g cheddar , grated
• 30g mozzarella , grated
