• 3 Cup Canned Corn, drained
• 1 Cup cotija cheese, crumbled
• 1/2 Cup cilantro, chopped
• 1/3 Cup red onion, diced
• 3 Tablespoon pickled jalapenos, chopped
• 1 Whole lime, zested
• 1 Cup all-purpose flour
• 2 Tablespoon corn meal
• 2 Teaspoon Tajin
• 1 Teaspoon baking powder
• 1 Cup milk
• 2 Large eggs
