This marinade has fantastic and unusual flavours that work very well with the pork. The fillet is a completely lean cut, but needs every bit of flavour it can get as a result of the lack of fat.

- 100 ml pomegranate juice
- 1 tbsp pomegranate molasses
- 2 tbsp clear honey
- 2 tbsp crushed sea salt
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 600 g loin pork fillet
- 1 tbsp olive oil
