  • 2 large green apples (about 1 pound / 454 g), such as Granny Smith, peeled, cored, and cut into 1/2-inch / 1.25 cm cubes
  • 6 ounces / 170 g dried apricots, quartered
  • 6 ounces / 170 g dried apples, finely diced
  • 4 ounces / 110 g dried pitted sour cherries, halved
  • 2 shallots, minced
  • 3 tablespoons / 47 g Dijon mustard
  • 2 tablespoons / 22 g yellow mustard seed
  • 1 tablespoon minced fresh lemon thyme or thyme
  • 2 bay leaves
  • Zest of 1 lemon
  • Zest of 1/2 orange
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon cayenne pepper
