  • 1 egg, beaten
  • ½ tsp vanilla extract
  • 200g soft dried figs, roughly chopped
  • 25g light muscovado sugar
  • 1 tsp ground cinnamon
  • 1 ball of stem ginger in syrup, drained and very finely chopped
