• 8-10, digestive biscuits, crushed into crumbs
• 65g, butter, melted
• 3, gelatine sheets, soaked in a little cold water
• 100ml, double cream, chilled
• 250g, cream cheese
• 1/2 tsp, vanilla extract
• 75g, sugar
• 125ml, apple juice
• 125ml, water
• 2 tbsp, sugar
• 1 or 2 drops of, red food colouring, optional
• 175g, raspberries
