Potato Hash Egg Cups - Potato Goodness

Ingredients

• 8 large Eggs, beaten
• 2 tbsp Milk or Water
• 1 1/2 cups (6 ounces) Potato Hash Shreds, refrigerated or frozen
• 1 cup Spinach, chopped
• 1 whole Red Bell Pepper, diced (approx. 1 cup)
• 1/4 of a medium Yellow Onion, diced (~1/4 cup)
• 1/2 tsp Salt
• 1/2 tsp Pepper
• 1/2 tsp Garlic Powder
• 12 tsp Cheddar Cheese, shredded (1 tsp per muffin cup)
• Cooking Spray
