Ingredients

• 8 medium zucchinis, sliced
• 2 tbsp olive oil
• 1 onion, finely chopped
• 2 cloves garlic, crushed
• 2 tbsp oregano
• 1 bunch kale, chopped
• 1 bunch spinach
• 1 tbsp grated lemon rind
• 2 ¼ cups ricotta
• ¾ cup mozzarella
• ¾ cup parmesan
• Salt
• Pepper
