  • 1/2 cup finely diced onion
  • 1-2 fresh hot chiles (such as jalapeño, serrano, or red Fresno), minced, or 1 tablespoon chili paste/flakes (adjust to taste for your ideal pepper sauce recipe )
  • 4 cloves garlic, minced
  • 1/4 cup neutral oil (like vegetable or canola) or olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt, or to taste
  • Optional: 1/2 bouillon cube (beef or vegetable), crushed, for a Maggi-style savoriness
  • For the Potatoes
  • 1.5 lbs potatoes (Yukon Gold or russet recommended), cut into even 1-inch chunks or wedges
  • 2 tablespoons oil (neutral or olive oil)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
