• 1/2 cup (105 g) sugar
• 1/4 cup (35 g) icing sugar, plus more for serving
• 2 cups (300 g) unbleached all-purpose flour
• 1 1/2 tsp ground cinnamon
• 1/2 tsp salt
• 1 cup (225 g) cold unsalted butter, diced
• 2 egg yolks
• 1/2 cup (125 ml) raspberry jam, or more as needed
