- 5 soda (saltine) crackers
- 1/2 tsp salt, ground sea
- 1/4 cup evaporated milk
- 2 egg (hard-boiled)
- 1 fish, fillet, white, boneless (enough for 8 small portions or sub with 8 shrimp)
- 1/4 salad (red) onion (sliced thinly)
- 2 lb potato, yellow (try bintjes, yukon golds or carolas)
- 1/2 cup olive oil
- 1/2 tbsp salt, ground sea
- 1/4 cup lime juice
- 1/4 cup mayonnaise
- 2 whole avocado (peeled, sliced, reserve 8 small slices for garnish)
- 5 small tomato (finely diced, reserve some for garnish)
- 16 olives (sliced in half, reserve 8 halves for garnish)
