Ingredients

• 6 frozen puff pastry shells (each 4 inches in diameter)
• 2 tablespoons olive oil
• 1/2 pound small shiitake mushrooms, stems removed and wiped clean (cut into quarters if large)
• 1/2 teaspoon salt
• 1/2 teaspoon freshly ground black pepper
• 3/4 pound medium shrimp, peeled and deveined
• 1/2 cup green onions (green and white parts)
• 1 tablespoon minced shallots
• 1 teaspoon minced garlic
• 1/2 cup Cognac or other brandy
• 3/4 cup heavy cream
• 1 tablespoon Dijon mustard
• 1 tablespoon minced fresh flat-leaf parsley
