This galette comes together quickly (especially if you have pie dough on hand) and is great with a side of dressed greens and a glass of crisp white wine.
Ingredients
- 6 ounces unsweetened pie dough
- ½ cup ricotta cheese
- ⅓ cup caramelized onions
- 1½ cups apples, (peeled, cored and sliced thin)
- ⅓ cup Gruyère cheese, (grated)
- 1 teaspoon fresh thyme, (lightly chopped, split)
- 1 egg yolk
- ½ teaspoon Dijon mustard
- ½ teaspoon water
- Salt and pepper
