Lemon Olive Oil Cake

Ingredients

• 1 Tsp baking soda
• 1/2 Tsp salt
• 3 eggs
• 1 cup California Olive Ranch extra virgin olive oil
• 1/3 cup milk
• 3 Tbl lemon juice
• 1 Tsp grated lemon zest
• 1 Tsp lemon extract
• 1 Tsp vanilla
• 1 1/2 cups confectioners’ sugar
• 2 Tbl + 2 Tsp lemon juice
