• 1 cup juice from about 4-5 SanLucar lemons
• 1 cup sugar
• 1/4 cup cornstarch
• 4 egg yolks
• 1/2 cup water
• 1/4 cup butter, cut into small pieces
• 1 teaspoon grated SanLucar lemon zest
