Korean Ginseng Chicken Soup – The Meatmen

Ingredients

• small chicken (800g-1kg)
• fresh Korean ginseng root
• glutinous rice
• cloves garlic
• jujubes
• gingko nuts
• litre water
• tbsp salt plus ½ tsp salt.
• spring onions (chopped)
• Dipping salt: 2 tsp salt, ½ tsp black pepper, 1½ tbsp sesame oil and ½ tsp toasted sesame seeds
• Sweet Sour Dipping Sauce: 4 tbsp light soya sauce, 2 tbsp white vinegar, 1 tsp honey, 30g diced yellow onion, 1 tsp toasted sesame seeds (crushed), 1 sliced green chilli
