- 3 pounds raw red beets, washed
- 2 cups chicken stock*
- 1 tablespoon high-quality blackberry liqueur or crème de cassis
- 2 teaspoons red wine vinegar
- 3 tablespoons salted butter
- Salt and pepper to taste
