Kimchi Carbonara with Spam – Kream Kimchi

Ingredients

• 1 pound of spaghetti or bucatini (or your favorite pasta)
• Kosher salt (to salt pasta water)
• 2 tbs extra virgin olive oil
• 12 ounces of spam (1 can)
• 2 ounces of shredded or grated parmesan cheese
• 4 egg yolks
• 2 eggs
• 4 ounces of kimchi (cut into smaller pieces)
• fresh blacked pepper
• crushed red pepper or chili oil (to taste)
