“Mother Clucker” Chicken Sandwich – As Seen on Dinner: Impossible : Robert Irvine

Ingredients

• ¼ cup beer
• 2 cups buttermilk
• ¼ cup pickle juice
• 3 tbsp sriracha
• 4 large raw boneless skinless chicken thighs (or 8 small portions)
• 1 ½ cups all-purpose flour
• 1 tbsp smoked paprika
• 2 tsp onion powder
• 2 tsp garlic powder
• 1 tsp kosher salt
• ½ tsp ground black pepper
• ½ cup mayonnaise
• 2 tbsp ketchup
• 1 tbsp Dijon mustard
• 2 tsp sriracha
• Juice of ½ lemon
• Kosher salt and ground black pepper, to taste
• Oil, enough for deep frying
• 8 Hawaiian sweet rolls, cut in half
• 1 tbsp grapeseed oil or butter (for toasting the rolls)
• 1 cup iceberg lettuce, fine shredded
• 8 thin slices ripe tomato
• 8 pickle slices
