Apple Honey Cake - Breaking Matzo

Ingredients

• 2 sticks butter, melted + 1 tbsp, melted for greasing the pan
• 3-1/2 cups all-purpose flour + extra for the pan
• 1 cup granulated sugar
• 1/2 cup light brown sugar, lightly packed
• 1 cup raw honey
• 3 large eggs
• 4 Granny Smith apples - 2 peeled and finely chopped; 2 peeled and pureed (or substitute 1-1/2 cups apple sauce for the 2 apples)
• zest & juice of 1 lemon
• 1 tsp vanilla extract
• 1 tbsp baking powder
• 1 tsp baking soda
• 1 tbsp cinnamon
• 1 tsp kosher salt
• 1/2 cup pomegranate juice
• 3/4 cup flour
• 3/4 cup light brown sugar
• 2 tsp cinnamon
• 1/4 cup butter, chopped into small cubes
• 1/4 cup walnuts, chopped (optional)
• 1-3/4 cups confectioners sugar
• 1/4 cup lemon juice
• zest of 1 lemon (or more!)
