Spiced Honey Cake: My Classic Rosh Hashanah Recipe

Ingredients

• ¾ cup (170g) unsalted butter, softened, plus extra for greasing
• ½ cup (100g) granulated sugar
• ½ cup (100g) packed light brown sugar
• 2 large eggs
• 1 cup (240ml) strong brewed coffee, cooled
• ¾ cup (240g) honey
• ¼ cup (60ml) vegetable oil
• 1 teaspoon vanilla extract
• 1 teaspoon lemon juice
• 2 ½ cups (300g) all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• ½ teaspoon ground cloves
• ½ teaspoon ground ginger
• ¼ teaspoon salt
• Optional: Powdered sugar, for dusting
